Strawberry-Rhubarb Pie

Whenever I see a bowl of beautiful fruit, my first instinct is to turn it into a dessert. So with our big supply of strawberries, I opted for a strawberry-rhubarb pie, as I’d been wanting to try rhubarb, as well, and it’s about out of season.

Now my crust-making skills are still beginner, as evidenced in the final product, but that didn’t hurt the taste any. I did feel like the filling was a bit too liquidy, but part of that might have been due to its baking being interrupted halfway through, driving across town, and then putting it back in the oven to finish up. Regardless, it was a wonderful way to showcase fresh fruit.
